Introduction
FSSAI is a statutory body formed under the food safety & standard act 2006. The basic purpose of this act was to provide a better and hygiene quality of food as well as to safe the interest of the consumer. After this act is enforce the quality, quantity and in the level of hygiene have been increases tremendously. The FSSAI sets minimum standard for foods so that there should be no confusion in the minds of consumers, traders, manufacturers, and investors. Basically FSSAI is authorise for protecting and promoting public health through the regulation and supervision provided by the food safety and standard act 2006.the FSSAI comes under the ministry of health and family welfare , government of INDIA
According to this act no person can commence any type of food business, whether it is manufacturing processing packaging or distributing or any other type of food related business until unless they get registers from FSSAI licence or FSSAI registration. Therefore now its compulsory to take FSSAI license or FSSAI registration if a person wants to do any food related business. The Licensing and registration of food business is given under section 31 of the food safety & standard act 2006.
fssai registration and license criteria
FSSAI issues three types of license based on nature of food business and turnover:
- Fssai Registration: For Turnover less than 12 Lakh
- FSSAI State License: For Turnover between 12 Lakh to 20 Crore
- FSSAI Central License: For Turnover above 20 Crore
Fssai Registration
All given following persons whose annual turnover up to12 lakh/annum is only eligible for registration by FSSAI:-
- Dairy unit including milk chilling units equipped to handle or process
- Up to 500 LPD of milk or up to 2.5MT of milk solids per annum
- Slaughtering units
- Large animal up to 2.
- Small animal up to 10.
- Poultry birds 50 per day.
- All food processing units including relabellers and replacer’s.
- Annual turnover up to12 lakh/annum and capacity of food production does not exceed 100kg/day.
- Vegetables oil processing units and units producing vegetable oil by the process of solvent extraction and refineries including oil expeller units, Meat processing units, Storage[except controlled atmosphere and cold], Storage[cold/refrigerator]
- annual turnover up to 12 lakh/annum
- Wholesaler, Retailor, Distributer, Supplier, Dhaba, boarding house serving food, banquet hall with food catering service, Fish/meat/poultry shop/seller or any other food of vending, Club/canteen, Hotel/restaurant , Transporter, Marketer, Hawker, Petty retailer of snacks/tea shops.
All above given fall in this category that is annual turnover up to 12 lakh/annum

The business operators are required to obtain FSSAI registration by submitting an application for registration and it is Form A. it includes

Fee structure for Fssai registration
- New registration certificate:- INR 100/year
- Renewal of registration certificate:- INR 100/year
- Duplicate of registration fees:- 10% of applicable certificate fees
Fssai state license
All given following persons/operators whose annual turnover between 12 lakh to 20 crore are eligible for registration for FSSAI state license.
- Dairy units unit including milk chilling units equipped to handle or process
- Up to 501 to 50000 LPD of milk or up to 2.5MT to 2500MT of milk solids per annum.
- Vegetables oil processing units and units producing vegetable oil by the process of solvent extraction and refineries including oil expeller units
- Up to 2.5MT/day and turnover above 12 lakh
- Slaughtering units
- Large animal more than 2 up to 50
- Small animal more than 10 up to 150
- Poultry birds more than 50 and up to 1000/day.
- Meat processing units
- Up to 500 kg meat per day
- All food processing units including relabellers and repackers.
- annual turnover up to 20 crore /annum and capacity of food production exceed 100kg/day to 2MT/day
- Storage[except controlled atmosphere and cold]
- Capacity up to 50000MT
- Storage[cold/refrigerator]
- Capacity up to 10000MT

- Turnover up to 30 crore
- Retailer
- Turnover up to 20 crore

Fssai central license
Large food manufacturers/processors/transporters and importers of food products require central FSSAI license.in addition to the eligibilities listed below, food operators has to take a central license for their head office If they have operations in more than 1[one] state.

- More than 50000 litres of liquid milk/day or 2500MT of milk solid per annum
- Vegetable oil processing units and units producing vegetable oil by the process of solvent extraction and refineries including oil expeller unit
